Sugar Cakes PDF Print E-mail
Here is a redipe handed down from my Great Grandmother who lived in Lancaster PA. They are called Sugar Cakes and are a combination of a cake and a sugar cookie. They are unbelievably easy to make and pretty cheap too.
 
Sugar Cakes
Pre-heat oven to 350 degrees
 
2 cups sugar
4 eggs
1 cup of melted lard, slightly cooled
1 cup of milk
1 tsp baking soda
2 tsp baking powder
4-5 cups flour
colored sugar to decorate cookies
 
 
 
Beat eggs and sugar until fluffy, mix in lard then add the rest of the ingredients and mix well. Drop by large spoonfuls, I use a serving spoon, they are supposed to be on the large side sprinkle with colored sugar. Bake about 15 minutes then check, according to your oven you may need more time. The cakes should be firm to the touch and a little brown right around the edge of the cakes. Cool on wire racks, store in tins or tupperware they keep for a long time either way, that is if everyone does not eat them first.
 
** Do not substitue lard, the cakes will not be the same, trust me people in my family have tried (mostly because they thought lard was the same as shortening no, these people do not cook often!)
 
** I like to use colored sugar according to the holiday, green and red for Christmas, pastels for Easter, red white and blue for the 4th or Memorial day. Blue would be nice for those who celebrate Hannukah. You can also use regular white sugar if this is what you have handy. I prefer the coarseness of the colored sugar, I even use the large crystal sugars that you can find at craft stores and any place they have a lot of baking tools, I love the "crunchiness" that the corase sugar has against the soft cake.
