2 cups sugar
1/3 cup mashed pumpkin
1/4 teaspoon cornstarch
1/4 teaspoon pumpkin pie spice
1/2 cup evaporated milk
1/2 teaspoon vanilla
1/4 cup butter
1 cup chopped nuts

Combine sugar, pumpkin, cornstarch, spice and milk, and cook until it forms a soft ball when dropped into cold water or until it reaches 235° F on a candy thermometer. Add vanilla, butter and nuts. Beat until creamy, and pour into buttered container. Let harden and cut into squares.
