Chunky Chocolate Candy PDF Print E-mail
1 (3.4 ounce) package chocolate cook and serve pudding mix (not instant)
1 cup sugar
1/2 cup packed brown sugar
1/2 cup evaporated milk
1 tablespoon butter or margarine
1 cup chopped pecans (or other nuts)
1/2 cup shredded cocoanut
1/2 cup raisins

In medium saucepan, combine pudding mix, sugar, brown sugar, milk and butter. Cook over medium heat until sugar dissolves and mixture comes to a boil.

Continue cooking, stirring frequently, until mixture reaches the softball stage (237 degrees F) on candy thermometer (about 7 minutes).

Remove from heat and stir in pecans, coconut, and raisins. Beat well and before mixture starts to harden (you need to work fast), drop by heaping spoonsful onto wax paper.
